Eventually dealer choice will not exist once more people figure out only choosing PLO for every round at the table is EV+. if everyone at the table only calls PLO every round then your table as a chip advantage over every table. more people will drop out of your table but the people who leave that table will have a much bigger chip stack than average and a better chance at top money prizes so simply having everyone at the table call PLO is EV+
